If I used real knife steel, then they wouldn't have a problem as far as durability goes. But since we typically use regular stainless steel, if you get too thin, it becomes to flimsy and easy to bend the blade. And as for the rivets, they actually are aged... and they look cleaner because of the brighter light. In person you'll see that they all have staining on them.
