I never heard of letting each coat dry. Personally I wait until the shine starts to go away and the plaster gets that flat look, then I do another coat. If you put wet plaster onto dry plaster, the dry plaster will leach the water out of the new plaster, and weaken it.

but yeah, everyone does things differently.
